11:00 am Make Levain 80/20
6:00 pm Mix dough halving the recipe
11:00 pm Shape Loaves Then refridgerate
11:30 am Bake  


Room temp was 70 F, fridge temp was 39 F. Dough was very wet, but fridge helped maintain form when transferring to dutch oven.
